Rich and Tiff's Birthday!

My mother-in-law Sandy asked me to make a cake for Rich and Tiff's birthday. There was really no way to include an over the hill cake and a girlie cake all in one so I made two. They turned out pretty good but of course the perfectionist in me will always find mistakes. The cakes were delicious and that's all that mattered in the end. I need to take more time and practice how to make fondant bows so my next one will come out looking better. And I also need to keep Beckett out of eating the bow pieces as well! I can't keep that kid out of anything. Hope you guys had a great birthday. Too many boys in the family...we need more girls!

Halloween Bowling Fest!

My parents, older sister Kerri and her daughter Alison came to visit us for Megan's Birthday and Halloween weekend. Since we had the trunk or treat Friday night the kids put on half of their costumes and we decided to go bowling for Halloween instead of trick or treating. We had a blast. Thanks for coming to visit we had so much fun even though Megan did whoop all of our butts at bowling!

Halloween Cake!

Okay here is the story behind how and why I offered to make this monstrous cake...

Scott came home the other night from being out home teaching with John Neilson who happens to be the Ward Activities Chairman. Scott was telling me about what they were doing for the ward trunk or treat since I had already signed to take cornbread and cupcakes. He contined to tell me that they were going to do a cake for dessert and were ordering two sheet cakes from Costco. I had an instant heart attack and called John immediately. Pretty much scolded him for even thinking about ordering cakes from Costco. The best you would get is a cake that is as much icing as it is cake and probably air brushed with "Happy Halloween" on the top. Nothing special at all and can you say GROSS! So myself being a glutton for punishment on top of the cupcakes and cornbread and also needing to get cupcakes for Meg's b-day done the same night and pumpkin bread for her class party as well I begged him to let me take care of the cake for the ward trunk or treat. Little did I know it had to feed 100 people at the time but I was up for the challenge. I called a friend in the ward Natalie since she loves to do cakes and asked if she wanted to help. I drew up a sketch and I knew what I wanted it to look like but I had no idea that it would turn out as well as it did. I am so proud of what Natalie and I put together in about three hours. Amazing! So the cake inside is white cake two colored orange and two colored black with white buttercream in between. I hope it looks really cool when it's cut into. The icing on top is chocolate buttercream covered in crushed oreo cookies. Natalie made rocks and the Happy Halloween letters out of gum paste. The tombstones are Milano cookies dipped in white chocolate and then RIP written in black. The ghosts are white lollipops and we just filled in the eyes and mouth with black as well. The fence is made of white lollipop sticks painted with chocolate. And then last but not least the haunted house is a gingerbread kit that was premade. I cannot even imainge making that from scratch! So there is it our wonderful Halloween cake that we hope with be the center of attention at the trunk or treat. Happy Halloween to all!!


Avalanche vs. Red Wings

Scott and I don't get very many pictures together since they are usually all about the kids so here is one of us from last weekend.

A few weeks ago my dear friend Deanna asked me if I would like to come help decorate some cookies for a Pepsi Center event. I was more than happy to help since it gets me out of the house away from work and the kids are at a sitter for a few hours. The cookies were a big hit at the event and in return for our hard work she was given tickets to some games and so she gave Scott and I tickets to a hockey game in which we picked the game against the Red Wings. The seats were amazing and we were catered to all evening! What a treat! The Avs won 3-1 so that was the icing on the cake. Thank you so much Deanna we had an amazing time.

Fall Festival


We headed out to a fall festival this year and although it was not the greatest we still had fun. We at least got to go on the hayride to see the cows which Beckett absolutely loved! Fun family times and next year we will have to find a little better one. Trial and Error I guess.

Mine and Ethan's New Hobby

Ethan has always loved to put puzzles together and has always been really good at it but while my sister Jodi was in town she bought the kids these two puzzles and Ethan and I put them together in record time. It only took us a day for each puzzle. I was really surprised at how good he was with bigger puzzles...550 pieces to be exact. We will definitely continue this hobby 'cause it gets harder and harder everyday as Ethan gets older to find stuff for him and I to enjoy together. I finally found that one thing for us!

First day of School....FINALLY!!

The kids finally started school yesterday the 24th and I am sooooo happy! Granted I only have two and a half hours before Megan comes back home but hey, little time is better than no time. Ethan is in 2nd grade now and Megan is in Kindergarten, half day unfortunately. You have to pay for all day kindergarten here and it is EXPENSIVE! I just have to remind myself that when this year is over she will be in school all day and then I won't know what to do with myself. Oh wait I know...I will bake all day. YUMMY!

Just for you, Brenda!

Brenda -

As I was reading your blog the other night about Hunter I kid you not Beckett came walking out dressed in Megan's clothes. I laughed so hard that I was reading about Hunter's dressing fopaux's and then I have got a kid that will not stop dressing in his sister's clothes. I had to take a picture so that I could post this for you. Then again today he decided to try on my socks with Megan's shoes and this is what you get. It's pretty sad that a two year old can fit into a five year old's clothes but even worse that he enjoys it. So know that you are not the only one with children who wear their clothes backwards or even wear their sister's clothes. Would Hunter do the same thing if he had an older sister with bright pink clothes? :0)

My Dream!

So this is the real reason why my sister was in town doing photographs for me. I am finally juming in with both feet and going for my dream. I have decided to start out small and make baked goods from home and out of a friend's bakery here in Colorado. One day, hopefully not too far away, I will be able to have my own bakery...that is the big picture I am striving for. So here are a few pictures of the food and also the brochure/menu that Jodi and I have created to get this all started. Again many thanks to Jodi for all the work she has done. She has definitely done a lot more than I have so I just hope she takes payment in cupcakes! :0)

Wow!! Pictures from around the city

Daytime after the storm!

Here are some daytime pictures of what it looks like outside. The forest area between the condos has been thinned out drastically. Before the storm you could not even see the condos across from us becuase of how thick and huge all the trees were now you can see them. You can see how well it shredded everything. And to think that our area was not hit the hardest that some other ares in Lakwood. I am gonna drive around today and get some more pictures of the city and see what kind of damage it did.

We are not in Kansas anymore...

Our experience with a tornado last night at 10:30 looked like this but much worse in person. Pictures are not very good but it was so dark out that it was hard to get the total aftermath of the storm. I was working and the lights flickered twice and my computer shut down so I got up to see what was going on and it was dead quiet outside, so I figured someone hit a pole somewhere big deal. In a matter of seconds...literally...the house started shaking like a cardboard box and we were in the middle of it all. I would say about 70 to 80 mile an hour winds ripped the trees, bushes and everything in sight to shreds. Mid sized hail pelted everything in its path and left a blanket of what looks like snow and then in a matter of 10 minutes it was all over and it was dead silent besides the rain that was falling. We then had three screaming kids scared to death huddled in a corner in the hallway that were awaken by the howling wind and the sound of rain and hail on the windows. Beckett shook like a leaf for about 15 minutes after it was all over and when we all finally went back to bed Beckett just laid between us with is eyes wide open quiet as a mouse afraid to go to sleep. Poor little guy the storm absoltely terrified him. We did not find out until after the storm was over while watching the news that a tornado had touched down in our area and so we came to realize that we were stuck in the middle of a tornado and did not even know it until it was over. I will have to take some pictures today of the aftermath but Scott said the pool had broken trees branches and leaves and pool chairs all over the place and in the pool. Kinda scary when you think back on it and realize what actually had happended.

Denver Zoo...gone once, gone twice, could there be a third?


Now that summer is here we have to find stuff to keep ourselves busy...in such case we have been to the Denver Zoo twice. They were both six hour days and we were exhausted by the end but we got to see all the animals and had a great time with our family in doing so.

As usual Megan has set up Beckett for another one of her grueling hour long photo shoots! But the funny part about this one is that Beckett is so hilarious I just had to post these pictures. Is that what I have to look forward to is him on the phone for hours on end with some girl he met (while holding a baby doll none the less.)? Oh boy I have a lot to look forward to in the coming years.

Fondant Trials



My first attempt at using fondant what do you think? I made it for a baby shower over the weekend and I thought it came out pretty darn good for the first time using it. The cake was absolutely sinful though with chocolate cake and a strawberry buttercream filling made with real strawberries, not flavoring. It was DELICIOUS!!
